Recently healthy properties of whole grain rye bread have become a popular issue. The Finns have centuries long traditions in using whole grain rye. For example, the traditional Finnish rye loaves are made of whole grain flour. The nourishing surface layers of the grain are used in grinding process. When we want to bake this kind of non-gluten whole grain rye dough, mechanical or automatic moulding differs from normal moulding of wheat grain dough.
